“Our prime rib is very simple but that’s why it’s so good,” says Mercer, who started working in a kitchen when he was just 13 years old. “To do it right is not easy. It’s a very fine line between cooking it to perfection to it being overcooked. To get the seasoning right is really like an art form. It really is delicious and is one of our best sellers so people really like it because they not only order it but they come back for it. It’s my favorite thing on the menu.”

Founded in April 2005, Carson’s is an eclectic American restaurant featuring a wide array of American favorites, including mouthwatering Prime Rib, USDA Angus Steaks, chicken, pork, fish and seafood, and a variety of fresh salads. Carson’s also features a full-service bar and offers an extensive wine list.
